Whatever the case, the julep strainer became wildly popular leading into the 20th century. While the julep strainer eventually became overshadowed by the Hawthorne strainer, which was seen by some as a more efficient tool, the julep strainer is still prized by top bartenders and cocktail connoisseurs around the world.

Trident

The Trident was created by Seattle-based bartender Robert Hess. It is a riff on the Negroni using an obscure set of ingredients inspired by the sea. This cocktail was so popular at the Zig Zag Cafe where "The Last Word" cocktails were revitalized, that it ended up selling more Cynar than everywhere else in Washington at the time!

Ingredients:

  • 1 oz Aquavit
  • 1 oz Cynar
  • 1 oz Dry Sherry (Oloroso or Amontillado)
  • 2 dashes Peach Bitters

Add all ingredients into a mixing glass. Add ice and stir until chilled. Strain into a chilled Professional Series Coupe glass. Garnish with a lemon peel. Enjoy!
