A Cocktail Story: The SPOF with Wyatt Sutherland

Wyatt Sutherland enjoys the Christmas season earlier than most. Nothing beats feeling festive than enjoying a cocktail during Christmas with friends or family. Here is Wyatt’s creation, the SPOF.

Every year around October I start to get into the Christmas spirit a little earlier than most people. With us transforming Ricardo’s into a Christmas bar you could say I have the holiday on the mind more than most. This made me want to create my own holiday classic to make my mark on the holiday. In enters the “SPOF”. I love to experiment with different base spirits and flavor combinations in the classic old-fashioned format. For this holiday drink, I use both plantation original dark as well as plantation OFTD. This is complemented with spiced pear liqueur from St. George, demerara syrup, angostura bitters, and a pinch of salt. This drink is warming, a little spicy, and a little sweet. Just like holiday cocktails should be!

Spicy Pear Old Fashioned by Wyatt Sutherland

Ingredients:

– 1oz plantation original dark

– 0.33oz plantation OFTD (Old Fashioned Traditional Dark)

– 0.5oz St. George spiced pear liqueur

– 0.25oz demerara syrup

– 1 dash angostura bitters

 

The Process:

Use a jigger to measure out all of the ingredients into a mixing glass. I prefer the multi-level jigger and etched mixing glass from Fifth & Vermouth. Add ice to the mixing glass and stir using a professional series teardrop bar spoon. Strain into a classic whiskey tumbler using a professional series julep strainer. Finally, add a big ice cube that you have made using the 6- section ice mold.
